I make crepes three times a year: Christmas morning (continuing my dad's family tradition: he used to make them for our family of eight kids growing up--he was in the kitchen all Christmas morning), and during the April and October General Conference sessions. I have been making these crepes long enough that it is time for me to retire the old recipe card.

Twice each year, on the first Saturday and Sunday of April, and the first Saturday and Sunday of October, members of the church of Jesus Christ of Latter-day Saints (Mormons) do not have their regular 3-hour Sunday meetings. Instead, we watch 4-5 different 2-hour sessions of General Conference, which is when the General Authorities of the church {including the prophet, his two counselors, and the Quorum of the Twelve Apostles} give prepared messages to the entire worldwide membership of the church. These messages are broadcast throughout the world in many different languages via radio, satellite, and Internet. The messages are always intended to uplift, inspire, encourage, and strengthen. If you want to know what Mormons believe, there's really not a better way to find out than to hear what the leaders of the church are telling its members. You MUST chill the batter, or they won't crisp like they should. I usually mix mine up the night before and put it in the fridge or out in the garage on top of my deep-freeze.
I didn't grow up with Nutella spread, but since my husband introduced it to me, it's pretty much all I have on my crepes. |
Get two (or even three) non-stick pans going and it will take much less time to make a huge stack. |
We do crepes on Christmas Day too. But we fill with sausage & eggs, and top with flavored syrups (blackberry, blueberry, strawberry, etc...) all over. Yum!! =)

DeleteI've never tried chilling before. I love them with brown sugar and lemon juice - delish. But Nutella is indeed the ultimate.

I love crepes. I always was intimidated to make them, but once I tried I was hooked. Strawberries/sour cream/brown sugar. It is making me hungry. What conference talk have I been thinking about most? Two, actually. A Little Child Shall Lead Them and The Merciful Obtain Mercy. I think perhaps Pres. Packer is sometimes misunderstood. His talk revealed how tender he really is.

DeleteThese crepes are the most delectable I have ever had! I love crepes and I also love conferance so what great piece of soul food for the body! I loved this last conferance and felt My soul get feed in abundance as i listened to a talk called "That the lost may be found" by M. Russell Ballard, I just feel like we live in a world today that makes it so easy to become lost, unhappy and given trials that make it difficult to stay grounded. He gave chilling statistics on divorce, families are being torn apart at high numbers! People (including myself)get so busy that they loose focus on what is truly important! He said "that the most important work we can do in this life is whithin the walls of our own home"...... He encourages us to pray, have faith in the lord jesus christ and He will Help us in our doings. What a Blessing it has been for me when i was lost and had heavy burdens that we can lift up our hearts to our Heavenly Father and be guided back to him.

DeleteMy FAVE crepe filling is homemade lemon curd and berries: strawberries, blackberries, blueberries--they all taste great w/lemon. Lemon pudding does NOT work, it is not nearly tart enough! Lemon curd is really easy to make though and sooooo good!
ReplyDeleteAs for talks, this April conference my fave was Elder Scott's talk on personal revelation. He's given a variation of this talk before, and it seems like he must have an AMAZING relationship with the Lord, probably earned through a lot of agonizing suffering after losing his beloved wife. This gives me a ton of respect for Elder Scott & I've been enjoying trying out his revelation-seeking suggestions.
Elder Scott's are often my favorite, ever since my sister Bonnie told me he was her favorite speaker, way back when we were in high school. He is so tender and sincere, and I love knowing that anyone listening in Portuguese hears Elder Scott's voice, because he pre-records them in the language of his mission!

I have a hard time picking favorite fillings for crepes, and I'm having a hard time picking a favorite GenCon talk for the same reason-- too many good options to pick from! I think one of my fav talks in recent years was Come What May and Love It by Elder Wirthlin. He was so great!

ReplyDeleteI would have to say that Young Women's conference was an amazing experience for me this year. I got to take my daughter to the conference center. Sister Dalton's talk was so inspiring-I haven't stopped thinking of it. She spoke of the young swimmer that lost sight of her goal and the coast in the fog, the crystals of the chandelier reflecting light, putting our shiney on, etc etc! The best bit was that Christ is the light of the world and that we need to hold up that light and be clean so that we can reflect it. You really should just read it :)

Mountains to Climb was a favorite for so many this conference! President Eyring is a favorite of mine, too--I love how he can speak through his emotion, it is always very touching and sincere.

ReplyDeleteSpeaking of conference, I was really touched this April by Ronald Rasband's talk "Special Lessons," which he focused on his little nephew Paxton, who was born with a rare chromosomal deletion, a genetic disorder that keeps him close to the hospital and requires a high amount of attention and worry from his parents.
David is taking a class right now about studies in disabilities, and we have had a lot of discussions at home about the worth of souls as a result. When we were pregnant with Hollie and the doctor asked us if we wanted to take a blood test to see our baby might have a disorder that would qualify her for a "mercy abortion," David and I were really humbled and sad. We have a nephew with spina bifida--one of the disabilities that many parents choose to abort their babies to avoid. We can't imagine our family without Harris; he is hilarious, so loving, and loves his life and his family. I just want to post this quotation from Rasband's talk about his meditations on getting to know his grandson:
"I was reminded of a familiar missionary scripture that took on new meaning: 'Remember the worth of souls is great in the sight of God.'
"I wept as I pondered the limitless love our Heavenly Father and His Beloved Son, Jesus Christ, have for each one of us, while learning in a powerful way what the worth of a soul is, both physically and spiritually, to God."

DeletePerfectly delicious crepes to warm the belly + perfect words to warm the soul=perfect combination! My favorite talk? "Of Regrets and Resolutions" by Elder Dieter F. Uchtdorf, but is it really fair to choose just one favorite? They were all so comforting, enlightening, and encouraging - as always. Favorite musical number - a goosebumps-giving arrangement of "Love One Another" by the men's choir during the priesthood session.
ReplyDeleteMy favorite way to eat them is with LOTS of fresh berries and REAL whipped cream. My husband and children like to add powdered sugar and maple syrup for the perfect sugar high...No matter the (sickeningly sweet) combo, these crepes are the perfect addition to our 2 most favorite weekends of the year!!!

My favorite conference number EVER is still an arrangement of "Come Follow Me" from April 2008--the alto part is so rich and gooey!

My favorite talk was Sister Dalton's talk about the Young (and old)women of the church. "Our daily contributions do matter because of Whose we are". Plus any talk that talks about vacuuming till your vacumm burns up is pretty cool (vacuuming is my favorite household job ever!)
ReplyDeleteThe only crepes I have ever had were Becca's Best Book Club Crepes so I can say without a doubt that they were the BEST! I liked the strawberry/whipped cream combo and also the Nutella. I really liked the picture of Calvin eating Nutella from the jar, but I probably won't be eating Nutella at the Renfroe's house for awhile.

DeleteElder Jeffrey R. Holland, "Lord, I Believe." One of the most personally affecting talks I can remember hearing, ever. The day after Conference I had already downloaded it and listened to it two more times! To have someone (not just "someone," ELDER HOLLAND!) _finally_ tell me its ok that I sometimes have doubts and concerns about the Church, instead of making me feel like I must be an apostate devilspawn for questioning, was earth-shattering for me. And effective. Just that little bit of validation flooded my whole heart with the reassurance of all the Gospel aspects in which my faith IS strong.

I loved tons of the talks, but my favorite was from President Monson. He talked about obedience and I love hearing stories of when he was a child. I love hearing that he was a normal kid that got in trouble and didn't always do the right thing (like burn up a bunch of weeds and let it get out of control) and yet he still ended up being the amazing man he is.
ReplyDeleteWe've adopted Becca's crepe recipe as ours and Abby loves them. My favorite way to eat them is with Nutella and banana inside and dutch honey on the outside.
Dutch honey? Mmmmmm . . . I must try it. This sounds like something my husband will love, too.
